First it looked so good and so fresh! I cooked it with chicken broth (didn't have any beef broth :) until it was super tender. I took the meat out and made the best beef gravy I have ever made in my life...it has to be the meat! I had some tomatoes that were not good enough for salad but still good to cook. I sauteed shallots until carmelized, added the tomatoes and a little later a clove of garlic. Mixed that with the meat and made meat and beans burritos. I had enough meat left and served it over rice with the gravy. Oh! Man! I was in heaven! Haha, did I share too much? It was down right plain old goooood!
Great cuts of meat & delicious stew! Always tender & tasty.
Love this stew meat! Slow-cooking it yields fork-tender results. One of our favorite recipes is Thai Red Curry Beef with Green Beans from the Whole30 cookbook.
