Wow what a lovely tasty cut! The light marbling fat elevates the flavor. We did a 24 hr Marinade lemon lime salt garlic scallions and then slapped it on the barbecue couple of minutes each side for rare temp; sliced it up then topped our summer avocado salads. Love supporting our sustainable farmers. Keeping it on the order list!
