Our lamb is strictly raised the way that domestic sheep have been for thousands of years which is nomadically herded on the land. The grasses and plants of the high plains in the Rocky Mountain West where our sheep are raised have the reputation for creating some of the best lamb in the world. Our lamb comes directly from the 'fat' of the land - no grain or confinement feeding yards are involved in any way. The Dorper and Katahdin breeds are a relatively new breed developed in the 1950’s from ancient breeds of Persian and African origins. They thrive in arid climates and have an exceptional meat quality produced from eating native arid plants. These breeds are known in the United States as 'hair sheep' -  meaning that they shed the majority of their wool. Hair sheep have been bred for a very tender and light taste much more similar to high end savory tasting beef. The finishing stages of our lamb involve grazing the animals on lush grasses and plants of the mountain lowlands which are naturally rich in flavor for the animals and irrigated by clean mountain springs and creeks.

From birth to harvest our cattle live on the land as they were intended to. The key to making the beef exceptional in taste is known as the 'finishing stage'. This is the rancher’s art of making unforgettable beef. In the final stages of creating great beef, we take extra care to make sure the animals are on the best pastures we have available when the grasses and plants flourish again in the spring and summer. The breeds of cattle we select are animals that excel on pasture and are often a mix of breeds. Some of the best beef we have created results from crossing Angus, Longhorn, Hereford, and Scottish Highlander. We believe that the taste of beef should reflect the healthy vibrancy and expanse of the prairies in which they are raised.
