WILD COUNTRY MEATBALLS RECIPE
Gather the spices needed to get the ball rolling!
Tasty little devils are all ready to go the oven.
5 lbs. Corner Post Power Pork or Big Porky Blend - or mix of both!
3 tablespoons salt
3 teaspoons black pepper
2 medium onions, diced small
3 tablespoons dried marjoram or oregano
2 teaspoons smoked paprika
2 teaspoons New Mexico Style chili flakes (or any non-spicy chili)
2 teaspoons cayenne pepper (or if you're brave use ghost pepper!)
4 tablespoons garlic powder
1 tablespoons finely chopped fresh parsley
2 cups of oats
6 eggs
2 1/2 cups Parmesan cheese
Preheat oven to 325 degrees. Soak the oats in COLD water for 15 minutes. Drain well and squeeze out the excess water. Using your largest bowl, mix all the other ingredients together including the oats. Once you think it's well mixed, mix for one more minute. Cook a tiny test patty in a pan, enjoy, and adjust the seasonings to your own taste. Let's get rollin'! Roll the meat into roughly 2 oz. balls of meat. Place balls onto baking sheets with about one inch of space between each. Bake for 30 minutes, rotating the pans halfway through cooking time.
