Try this tender lamb rib chop recipe.

Mix all ingredients and marinate as least one hour, but not more than 12 hours.

2 packages Corner Post Lamb Rib Chops
1/2 bunch fresh parsley, chopped
3 green garlic stalks*, chopped (or 4 cloves rough chopped garlic)
1/2 tablespoon paprika
2 tablespoon white wine
1/2 cup olive oil

* Green garlic can be found at most local farmers markets. It has a younger and slightly spicier garlic flavor. It's only available at the beginning of spring, so embrace the flavor of the season! 

Welcome to spring flavors! Mix all ingredients in a baking dish, cover, and let marinate for at least one hour, but not more than 12 hours. Remove chops from marinade. Salt and pepper the chops and cook on medium-high heat. Cook for 3 minutes on each side in a nice hot pan to get a great sear resulting in medium rare meat. Our favorite side for these tender chops is butter sauteed zucchini noodles with fresh herbs topped with toasted cashews. It tastes like springtime sunshine! This recipe can be used with any cut of lamb at Corner Post Meats.
