Damn Big Burger recipe from Corner Post Meats - grass fed beef burger with bacon


2 lbs Corner Post Ground Beef or Beef Patties

sliced Corner Post Meats Bacon
6 medium brown onions, sliced
2 oz of your favorite whiskey
sliced cheese - sharp cheddar or provolone
brioche buns
mayo and mustard
burger fixings - lettuce, tomato, pickle, avocado 

Cook onions on LOW heat with 2 tablespoons oil and pinch of salt to caramelize. This is a slow process of bringing out the natural sugars of the onion to bring out the best flavor. This takes a little time, but it's so worth it for the magic to happen! For best caramelizing results this should take an hour and half. When onions are soft and start to turn a light caramel color, turn the heat to medium and add the whiskey. Let the whiskey cook down until no liquid coating remains in the bottom of the pan. Remove from heat and set aside. Cook your bacon while your waiting.

Make four 1/2 lb. patties from ground beef or use the pre-made 1/4 patties. Salt & pepper each patty and place in preheated skillet over medium-high heat. Be sure to cook patties for 5 - 8 minutes. Assemble burgers with all your favorite toppings along with a healthy heap of your whiskey caramelized onions! Pile on your cooked bacon and cheese. Serve with fries or a salad.
